Sarsa is pure tummy love *****


Been quite busy these past weeks.
But I've managed to try out Sarsa Kitchen + Bar, Chef JP Anglo's restaurant at the Fort.
Sarsa offers Chef JP's take on Negrense cuisine. And the guy manages to give depth to everyday Negrense favorites like Inasal. Batchoy, etc. and turns them into masterpieces you can savor again and again.  

Parking is hard, although you can park at the Fort Strip and walk. Reservation is a must and long lines are the usual norm. Went here to try the Sizzling Kansi, their take on sizzling bulalo that Erwan Heusaff was raving about in the Food Network, and the food is indeed remarkable, wonderful, and worth lining up for.






Sizzling Kansi (Php 380) The Sizzling Kansi has landed Sarsa in the mouths and wishlists of foodies everywhere. Their take of the Kansi is probably inspired by sisig, with bite-size morsels of beef and red onions on a sizzling plate. Bone marrow is the centerpiece of this opus, with the delicious "utak" waiting for you to spread it on steaming rice. Gravy is poured over the sizzling plate, a tear fell when I tasted it. I assure you one cup of rice is not enough to savor this sinful specialty.

What's not to love? This cholesterol-hugging, artery-clogging favorite usually comes fried, but at Sarsa, this is done inasal style and grilled. Dip in vinegar and you have a winner. I can't tell you how good it is until you try it yourself. An order comes in 3 sticks.

This is one vegetable dish with different textures in one dish. Chili garlic and anchovies are added to the mix, giving you a dynamite of different flavors that make you want to eat your veggies. This is super delicious. More rice, please.

Had a great dinner experience at Sarsa, although they forgot one of our orders, they quickly made up for it. Food was not just great, it's mind-blowing deilcious. Will definitely be back.
